Mix it with a bit of Spotted Owl, seems to do the trick. If that isn't available, maybe some truffle oil....what can I say?

Wild meats often serve well by marinating them in milk, or buttermilk. The lactic acid helps to take out some of the wild gamey flavour. On the whole, the only way to really change the flavour is to mix it with other things to disguise the taste. Then often you loose what you wanted in the first place

If you soak the heron in lemon water or vinegar water it will take away the wild taste. Stuff it with the herb of your choice, rosemary, thyme, or a mixture and the flavor will penetrate the meat.
