Some drinks are ment to be lit. It has to do with the taste and looks, but mainly it alters the taste. The drink becomes hot from the top but stays cool from the bottom as the flames are normally not kept burning for that long. Try it sometimes.

the concept that "bastard" is talking about is the excuse that bartenders will give you. the burning really doesn't do anything and just used as a feature for your money.
