Should I serve all one kind or offer a choice?
Planned desserts are, Pumpkin Chiffon Pie, Blackberry Cheesecake, Pears Pouched in a Maréchal Foch.

2 oz servings. Most dessert wines here only available in 375 mil. Family dinner, most are staying overnight or have plans where one doesn't drink.

I would buy one bottle each of light Californian orange muscat a good Australian late picked Semillon, spatlese Lexia or Botrytis [noble rot] Reisling . Buy 750 ml. bottles and use small glasses. If you have served other wines with the entree and main sensible drinkers will, by now, have reached their limit.

Ok for the first part of your question, each 375ml bottle will give you four glasses, so if you have 10 people you will need at least 6 bottles so that all your guest can have seconds but if not all like it you might be safe with 5, but in catering you always get ten percent more that you need in case of spills or someone really likes it or is a heavy drinker. As for one kind or a choice, the blackberry cheesecake would be better with a port or sherry but the pears would be over powered by a these and be better complimented by a Muscat or Sauternes. The pumpkin stands in the middle and can be good with either. So with that you should probably get two different kinds of dessert wines.

Three bottles of one kind should do it. Being fairly sweet, one glass and a top-up is about all most people enjoy.
