First.. in lieu of marinating the chicken.. inject the chicken with your favorite seasonings mixed with melted butter or vegetable stock. You can buy the injectors at most grocery stores. Then place the chicken on the grill (throw some hickory chips on the coals for more flavor) and sprinkle more seasoning of your choice..(cajun.. lemon pepper.. carribean jerk.. etc) cook.. checking and turning frequently (I usually smoke 9 leg quarters for about 1 hour 20 min. or so over med. heat).
Wait until the chicken is ready to remove from the grill before you add any tomato based sauce. this will burn.. brush the sauce.. (try Jack Daniels Tennesse Hickory Sauce) then remove and enjoy!
If you're cooking a whole chicken.. wash and remove the gizzard.. .liver.. etc. Inject as directed above.. cut a soda or beer can just at the top.. fill halfway with coke or beer.. add butter and lots of seasonings.. place the can in the chicken's "rump" and place the whole chicken on the grill sitting on the can. Sprinkle with more seasonings over the skin. The moisture from the liquid in the can will keep the whole chicken absolutely wonderful! The wings will begin to spread open when the chicken is done. A 4 -5lb chicken will cook in apprx. 1 hour 45 minutes over medium heat. Remove the can.. (I always drizzle a bit of the can juices back over the chicken).. brush with your sauce.. and enjoy!

The hardest part is to, get the grill hot enough and not put the chicken, or whatever on too soon. But what you do is, spray the grill with PAM for grills, before you heat it- gas grill or charcoal.
Soak the chicken in your chosen marinade or sauce, over night, or while heating the grill. Slowly put it on the hot grill and let it cook. I keep turning it over, to be sure it gets done. There are tools for bbqing- availaable at KMart and Walmart, every summer. Maybe, Fall, too. Buy some, if you don't have any.

of course when you make barbecue ypu marinate the chickem first to make your chicken tender & taste good. You can marinate it with some pre-mix ingredients but you can also have it your own way. The sauce can be applied while youre still grilling it or you can have it also applied right after it was cooked & before you served it. The important it your grilled chicken will not be too much grilled ....

Hi! Put the chicken in a low heat area. I assume that you're cooking pieces of chicken, not a whole chicken. Correct me if I wrong.
Keep the chicken on a slow cook, 30 minutes to a side is about right. Check the temperature of the deepest part of the thigh, when it hits 170 degrees, it's time to put on the sauce, or not.
I like my chicken smoked, but you didn't ask about that. So, I didn't tell how!

1. U may heat ur charcoals on the stove until they turn red...for express preparation..transfer the hot charcoals to the bbq grill.
2. Marinate ur chicken first with your favourite sauces plus ur herbs..say 20 minutes to 1 hr.
3. Feel with your hands above the grill, whether or not your coals are hot enough...bcareful not to burn yourself in the process...if heat is not enough...fan it
4. lightly brush some cooking oil on the grill wire to prevent your chicken meat from getting stuck..
5. you may skewer your chicken wholly or you just lay the pieces on the grill.
6. to prevent dryness on the meat while grilling, u may brush the meat with extra oil and perhaps honey and ur sauces.
7. u may cover the grill and with some open ventilation to let it cook..
8. u can spray some water if the fire starts to build and try to scorch your food...and fan away...
9. u will know when the meat is cooked...golden brown and slightly burnt....Good luck.

Before marinate in the refrigerate for 24 hours. Throw away that sauce that was in the raw chicken then baste with new sauce during cooking and also afterwards for outstanding taste. Checkout the website below, hope this helps.

marinate the chicken... grill the chicken until about 90% cooked.... brush the bbq sauce... turn brush again while still on the grill. repeat until desired amount of sauce is on the bird..... and finish cooking. enjoy mmmmm good.....

I suggest that you par-boil the chicken first. That makes it tender. Apply sauce throughout the grilling process.
