off for about 10 hours in a kitchen with no heat on? How long is it still safe to eat??

Absolutely not! It would have been OK to eat for a maximum of 4 hours depending on the temperature. There is a temperature danger zone that exists between 40 and 140 degrees. Potentially hazardous food, this includes ground beef, should not be stored or allowed to remain between 40 and 140. Bacteria responsible for foodborne illness thrive in the temperature danger zone and make food inedible in a few hours. States have different laws that require foods to be thrown out if they are in the danger zone for too long. In New York it's 4 hours.

Bacteria grow quickly on food that is between 40 degrees and 140 degrees. Rule of thumb is anything that has sat out longer than 2 hours should be thrown away. There is no heat on in my kitchen right now and it's still 68 degrees. Danger Zone.

Any kind of food that has been sitting without refrigeration for longer than 2 hours needs to be thrown out. Bacteria has formed and you can get very sick from it. By the way always cook your meats to 165 degrees internal temp to reduce the risk of getting any foodborne illness. Wash hands before preparation. Hope this helps!

Problems start happening with ground beef around the 2-4 hour point, I recall. It might be OK, but I would throw it outside without thinking twice, unless there was a survival need, such as a disaster.

Meat starts to develop bacteria when it hits room temperature. After 10 hours of just sitting on the stove, it has been at room temperature for about nine and half hours.
Its unsafe to eat it after that much time.

really depends on your immune system and if it were covered or not. I would definately say DO NOT EAT IT!!!!!!! When I was a kid my parents never refridgerated leftovers. They sat on the stove from dinner till teh next day for lunch. I never got sick and I don't think people realized it was bad for you then. Nowadays with all the sterilized environments, peoples immune sytems are truely weaker than they were 30 years ago. It is for the best, don't get me wrong, I am saying DO NOT EAT IT!!!!! i never got sick wheni was a kid because of it

food needs to be held at under 40 or over 160. If it's been between thoughs for more than 4 hours don't eat it.

The general rule of thumb is that you want any protein, or meat. To be rapidly reheated or cooled to either 155 degrees or above or 40 degrees or below within two hours of being left out. I would not feel too safe to it the meat at this point. Below you can find the government/usda standards that they follow. Hope this helps.

You can prevent foodborne illness by taking the following precautions:

* Wash your hands with hot, soapy water before preparing food and after using the bathroom or changing diapers.

* Keep raw meat, poultry, or seafood and their juices away from ready-to-eat foods.

* Cook foods properly and at a high enough temperature to kill harmful bacteria.

* Refrigerate foods within 2 hours or less after cooking because cold temperatures will help keep harmful bacteria from growing and multiplying.

* Clean surfaces well before using them to prepare foods.

I have left my chili con carne on the stove top over night and eaten it for lunch the next day and I am still alive to be able to pass on that information to you.

Unless it was a stinking hot day, I would eat it.
