This is the simple, standard recipe with all the basic ingredients.
Ingredients
6 green peppers
1 1/2 to 2 pounds ground meat
1/2 cup grated onions
1 cup raw rice
1/2 cup finely chopped celery
3 eggs
1 teaspoon salt
1 tablespoon fresh-ground pepper
1/2 cup bread crumbs
1 cup tomato juice and milk to make quite moist
Sauce:
4 cups tomato soup
1 cup tomato juice
1 can tomato sauce
Directions
Remove tops, membranes and seeds from peppers. Mix all ingredients for stuffing and fill peppers. If any mixture remains, form into 2 inch balls and place all in baking dish or small roaster pan. Cover with sauce. Spoon sauce over peppers during baking period. Bake 1 ½ hours at 325 degrees

this is what I do . Cut the top of 4-6 nice sized green pappers clean out and blanch in boiling water for about 2- 3 minutes. For the filling i use Hamburger, finely chopped onion , browned. then I add i can diced tomatoes with juice and some cooked rice, shredded cheese just a little like 1-2 cup. put the stuffing in the green pepper and bake in a shallow pan with a little water in the bottom for about 35-45 minutes at 350 they should be delicoius. oh yes and in the last five minutes put some tomatoe sauce with a little sugar mixed in it on top of stuffed peppers with a sprinkle of cheese.

STUFFED GREEN PEPPERS
1 lb. ground meat
1 lb. ground pork
4 eggs
1 cup Italian style bread crumbs
1/2 cup grated Parmesan cheese
2 cloves fresh garlic
salt
pepper
Italian seasoning
2 cans tomato sauce
1/2 cup cooked white rice
4 large green peppers, sliced in half
Grease bottom of pan with olive oil. Mix meat, eggs, bread crumbs, cheese, garlic, and all seasonings in large bowl. Add rice and mix together. Slice green peppers so that you have 8 halves. (You can also slice off the top of the pepper and use the whole pepper instead). Stuff peppers with meat mixture. Place in pan and pour both cans of tomato sauce over top and along bottom of pan. Cook @ 350 F for about 1 hour. Serve with rice or mashed potatoes.

Use any of the recipes that you have already received. Instead of baking or microwaving them, here is what I do.
Heat a can of tomatoe juice in a large pot. Prepare peppers with filling. Make sure to take a knife and stick it through the bottom of each pepper. Now, drop them into the boiling liquid and cook for about ten minutes.
You can also use V8 juice, or add seasoning to the tomatoes juice.

Cajun Chicken-and-Rice-Stuffed Peppers:
Use Cajun seasoning (such as Spice Hunter) that doesn't list salt as its first ingredient.
2 large red bell peppers
1/2 pound skinless, boneless chicken breast, cut into 1/2-inch pieces
1 1/4 teaspoons Cajun seasoning
2 teaspoons olive oil
1/2 cup chopped onion
2 garlic cloves, minced
1 1/4 cups fat-free, less-sodium chicken broth
1/2 cup uncooked converted rice
1/4 teaspoon salt
2 cups baby spinach leaves
5 teaspoons chopped fresh chives
Cut bell peppers in half lengthwise; discard seeds and membranes. Arrange halves in a 9-inch pie plate. Cover with heavy-duty plastic wrap. Microwave at high 5 minutes or until crisp-tender; drain. Return peppers to pie plate.
Combine chicken and Cajun seasoning in a bowl. Heat the oil in a medium saucepan over medium heat. Add the chicken; sauté 4 minutes or until done. Remove from pan.
Add onion and garlic to pan; sauté 1 minute. Add broth, rice, and salt; bring to a boil. Cover, reduce heat, and simmer 15 minutes. Return chicken to pan; cover and cook 3 minutes or until rice is done. Stir in spinach and chives. Divide the rice mixture evenly among pepper halves.
Yield: 2 servings (serving size: 2 pepper halves)

Bell pepper or hot pepper stuffed with tuna, green onion, egg,
bell peppers is also good stuffed with immitation crab, shrimp, or other seafood.
My favorite is stuffed bell peppers with
6 medium bell peppers
1 lb lean ground beef
1/3 cup chopped onions
1 tablespoon cooking oil
2 cups stewed tomatoes (1 1/2 cans)
3/4 cup pre- cooked rice (like Minute Rice)
2 tablespoons worcestershire sauce
salt & pepper
1 cup shredded sharp cheddar cheese (plus extra for topping, about 3/4 cup)
Core and clean peppers and cook in hot water for approximately 5 minutes. Remove from water, stand upside down and drain.
Sprinkle inside with salt.
Brown beef and onions in hot oil. Add tomatoes, rice, Worcestershire sauce, salt and pepper. Simmer 5 minutes.
Stir in 1 cup cheese and stir until almost melted.
Stuff peppers and top with additional cheese.
Bake approximately 25 minutes in 350 oven.
Note: I usually add about 1/4 cup water to the baking dish just prior to put it in the oven. Also, if you think the whole pepper is to large, you can cut it in half and stuff them that way.
Note #2: My grandson doesn't like to find a "chunk" of tomato in his pepper -- so if he's going to be around for the meal (his favorite one), I'll put the stewed tomatoes in my food processor and give them a couple whirls just to break up any large pieces of tomato.

this is how i do it for my family and friends and they love it.. i use two bell peepers(red or green i like green) per person.......about 2lbs or so of hamburger and 2lbs or so of grand sausage. salt pepper cumen chile powder ounion powder garilic about a 1tsp of each(i also put about 1\2 tsp of chayanne pepper ) 1\2 can of tomato paste 1 egg and about 3/4 cup of uncooked rice. cut the tops off the peppers and remove the vains stuff the peppers with the meat put tops back on.put peppers in a pot (do not stack them on top of each other) fill pan half with V8 JUICE AND HALF TOMATO SAUCE.....................bring to a boil and then cook on medium untie the peppers are soft and the meat is fully cooked about 2 hours. enjoy. this works well in a slow cooker also
