Hi cloudy, Well for starters they are both made from fresh vegetables. Tomatoes/Cucumbers for the "Gazpacho" and Beets for the "Borscht. In addition, they are both served "cold". XOXO Moonpie P.S. My German grandma made them both, from fresh veggies in her garden. It was to die for!

gazpacho-a spanish soup made out of fresh vegetable whichsauted a while add stock bring to boil make paste,not so fine(when u drink u wil bite the pieces)keep one hour in refrigerator befor serving.
borsht_a russian soup made out cabbge beets potatoes carrots chopp finely ,soute with onion add stock serve warm
