Cook them separate from the rest of the dish and them add them last.

You could try frying them to seal in their juices, that way they wouldn't bleen all over everything. Or like someone else said, just add them in at the very last minute and toss them in with your food.

Cook them separately. I can't imagine what you might be combining w/ them, but quit doing it!

you could make a beet salad..i think by boiling them and adding some vinegar...
