Maple Pecan Popcorn Balls
1 cup pecans (3 1/2 oz), toasted and coarsely chopped
About 8 cups plain popcorn
3/4 stick (6 tablespoons) unsalted butter
1 1/2 cups pure maple syrup
1/2 teaspoon salt
Toss together pecans and popcorn in a large bowl.

Melt butter in a 1- to 1 1/2-quart heavy saucepan over moderate heat. Add syrup and salt, then boil, without stirring, until mixture registers 300°F on thermometer, 15 to 20 minutes.

Pour syrup mixture over the hot popcorn and stir gently to coat. Cool until the popcorn mixture can be handled easily. With buttered hands, quickly shape the mixture into 2-1/2-inch diameter balls. Wrap each popcorn ball in plastic wrap.

Heres the recipe my grandma used every Halloween for 35 years.


18 cups popped popcorn
2 cups sugar
1 cup water
1/2 cup light-colored corn syrup
1 teaspoon vinegar
1/2 teaspoon salt
1 tablespoon vanilla

Directions
1. Remove all unpopped kernels from popped popcorn. Put popcorn in a greased 17x12x2-inch baking or roasting pan. Keep popcorn warm in a 300 degree F oven while making syrup.

2. For syrup mixture, butter the sides of a heavy 2-quart saucepan. In saucepan combine sugar, water, corn syrup, vinegar, and salt. Cook and stir over medium-high heat until mixture boils, stirring to dissolve sugar (about 6 minutes). Clip a candy thermometer to side of pan. Reduce heat to medium; continue boiling at a moderate, steady rate, stirring occasionally, until thermometer registers 250 degree F, hard-ball stage (about 20 minutes).

3. Remove saucepan from heat; remove thermometer. Stir in vanilla. Pour syrup mixture over the hot popcorn and stir gently to coat. Cool until the popcorn mixture can be handled easily. With buttered hands, quickly shape the mixture into 2-1/2-inch diameter balls. Wrap each popcorn ball in plastic wrap. Makes about 20 popcorn balls.

NOTE: This is not a job for little people. This mixture is hot and can burn. BE CAREFUL.

After you taste these you will never want any others.

You can add a little food coloring or experiment with the flavor by adding different flavorings other than vanilla, but I prefer not to mess with perfection.

Just a hint - whichever recipe you use, be sure to remove the unpopped kernels before mixing in the sugar/marshmallow sticky stuff. Nothing is worse than biting into a popcorn ball and getting a rock solid kernel.

INGREDIENTS:
1 tablespoon vegetable oil
1/2 cup unpopped popcorn
6 tablespoons butter
5 cups miniature marshmallows

Grease a 9x13 inch baking dish. Set aside.
Add vegetable oil to a 4 quart saucepan, and heat over high heat. When oil is hot, add popping corn. Keep pan moving constantly. When corn stops popping, remove from heat. Put popcorn in prepared pan.
Melt butter In a medium saucepan over low heat. Stir in marshmallows and cook until melted, stirring constantly. Pour marshmallow mixture over popcorn and mix with spoon to coat evenly.
Let mixture cool slightly. Smear butter on your hands or spray with non-stick cooking spray. Mix popcorn with your hands so that it is evenly coated.
Form popcorn into 8 balls.

Caramel Popcorn Balls

Original recipe yield: 15 popcorn balls.

INGREDIENTS:
5 tablespoons vegetable oil
2 1/2 cups unpopped popcorn
1/4 cup butter
1 cup packed light brown sugar
1/2 cup light corn syrup
2/3 cup sweetened condensed milk
1/2 teaspoon vanilla extract

DIRECTIONS:
Add 1 tablespoon of the oil to a 4 quart saucepan, and heat over high heat. When oil is hot, add 1/2 cup of popping corn. Keep pan moving constantly. When corn stops popping, remove from heat. Place popped corn in oven to keep warm. Repeat until all corn has been popped. Set aside.
In a medium saucepan with a candy thermometer inserted, combine butter, sugar, and corn syrup. Stir well and bring to boiling over medium heat. Stir in condensed milk; simmer, stirring constantly, until thermometer reads 238 degrees F (114 degrees C). Stir in vanilla.
Pour caramel over popped corn and stir to coat. Butter hands lightly; shape popcorn into balls about 3 1/2 inches in diameter.

Grandpa's Popcorn Balls

Original recipe yield: 10 - 3 inch round balls.

INGREDIENTS:
2 cups white sugar
1 cup light corn syrup
1/4 pound butter
1/4 cup water
salt to taste
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar (optional)
5 quarts popped popcorn
