i think it is because it is organic and minerals are inorganic

Sugar is a carbohydrate from plant sources. Minerals may be present in plants but are not plants.

Sort of like asking why is an apple not the same as a piece of granite.

The chemical composition of minerals are made of salts of various metals while sugar is made up of carbon, hydrogen and oxygen, all non-metals.
