Certain foods and things contain substances that causes allergic reaction- you call it allergens. When such substance gets in the body there is an overreaction of the immune system where a certain kind of protein called Immunoglobulin E (IgE) antibodies to fight with the perceived culprit substance is produced. The next time such substance get into the body even in the smallest amount, the IgE antibodies sense it and signal your immune system to release histamine and other chemicals into your bloodstream. That is when you will have all the signs of allergic reaction.Symptoms may include hives, itching, swelling of the lips, face, tongue and throat, or other parts of the body, wheezing, nasal congestion or trouble breathing ,abdominal pain, diarrhea, nausea or vomiting, dizziness, lightheadedness or fainting or could be even worst that it with the thing called anaphylaxis.

There is a protein in these substances to which the individual is hypersensitive to, so when ingested, the immune system detects this protein and starts off an immune response. The most important aspect of this response (in allergic people) is the activation of mast cells. These cells contain granules, when activated, the cells degranulate, thus releasing substances such as histamine and leukotrienes and certain cytokines. Histamine is a potent vasodilator and bronchoconstrictor, thus their skin becomes red an itchy (in skin allergies) and they find it difficult to breath (ingestion of harmful protein).

I have allergic reactions and it certainly is no fun. A person's body just can't accept certain things so they have a reaction to what ever their body can not accept.
