BEER!!! Actually I beleve you can drink white wine with chicken.

The most important rule in wine pairing is to drink what you like. However, traditionally, you should drink a white wine, a little fuller bodied with chicken. If you are adding a cream sauce, I would try something along the lines of a good, dry, chardonnay. Kendall Jackson is readily available and good with just about antyhing. Me? I would drink an Australian or Chilean Red, like a Cab/Shiraz blend, or a straight cab, because that is what I prefer. If I were you, I wouldn't go much lighter than a Pinot Gris, but if you like them sweet, do it sweet. It's your dinner!

It was the old snob nose wine drinkers that created the old tales of red wine with red meat, white wine with white meat. Now the way that wine drinkers are enjoying their wine is by pairing whatever particular wine you like with whatever you are eating. For example, if you are only a red wine drinker. Then if you are having a steak, you may have a bigger bolder red wine. If you are having a red sauce pasta then maybe you might have a lighter, less rich wine.

If the meat is a dark color, drink red. If the meat is a light color, drink white. Rose is a good choice for chicken and fish. You should choose the wine you like, not what the magazines tell you to...

Wine snobs created these "rules". However, for chicken, pinot grigio or a chardonnay, even a rose wine goes well. I find that red wine goes better with chicken parmasean & fried chicken than white wine. For me, when it comes to pairing a wine with a particular food, I drink what I like.
