Also is it ok if they just stay out of the refrigerator in a cool dark place?

For long periods, it should be stored in a cellar, with low but above freezing constant temperature.

In the hours before serving, it is ok to put it in a fridge or an ice box, just avoid the freezer of other places really below the melting point of ice.
