How do I manage to burn french fries, yet, they are still cold in the middle? Lol I attempted cooking for the first time today, and the fries are burnt outside, and cold inside... I swear, only I could do that...

make sure to prewarm the oven before cooking, and make sure to get as much ice off the fries before putting them in. Also, use the middle rack in the oven, and use a good flat pan for cooking them- it may even help to line the pan with a piece of aluminum foil, shiny side down.

if all this doesnt help, oyu may have an oven temperature problem. check to see if both coils of the oven are actually working----- but dont touch them!!!! =)

Hey Romance -

Pomme Frites....

Most of the best fries are twice cooked - meaning fried twice at two different temperatures.

1. Fry for about 3 minutes to cook the inside - then drain on a paper towel - the raise the heat on your oil or grease about 50 degrees.

2. Plop them back in for a second cook - only this is for the crispy outside - drain again (they should come to the top when they're done )- and salt right after they come out.

Ooooh I can taste them now....lol

I don't know what temp you used. Perhaps it was too high. Coat the fries lightly w evoo & sprinkle w herbs (finely grated parmesan cheese if you like) or chili powder -- or spray the fries w cooking spray on a cookie sheet at about 350 for about 20 minutes. Keep checking cooking time for doneness, and turn 'em over.

What probably happened was that the oil was so hot that by the time the heat starting getting to the middle of each fry, the outside was already getting burned.
Next time, don't let the oil get too hot.

oven too hot or direct fire, they cooked on the outside before they had a chance to cook inside
