SHO stands for Senior House Officer.

When you've just graduated medical school in the UK, you get a job as a junior house officer for 1-2 years. You then go on to become a senior house officer - so any SHO has been qualified for a couple of years, they have more responsibility and experience than JHOs straight out of med school. In surgical rotations, SHOs are allowed to do simple operations such as appendicectomies.
