2 lbs collard greens, tough stems discarded, leaves chopped
2 Tbsp medium onion, chopped
1 large garlic clove, minced
2 teaspoons bacon fat
2 Tbsp olive oil
2 Tbsp dark sesame oil (Dynasty or comparable)
Chili pepper flakes, a pinch
Salt, a couple pinches
Sugar, a couple pinches
1 Use a large skillet with a tight fitting cover. Melt bacon fat and heat olive oil on medium heat. Sauté onion until transparent, a couple of mintues. Add garlic and and sauté until fragrant, about 20 seconds.
2 Mix in the greens, sesame oil, chili pepper flakes, salt, and sugar. Cover and cook until tender, 8-10 minutes.
Serve with barbecue sauce.
Serves 4.

If canned I cannot help you.
If they are fresh you need to wash them very well, chop them and then place them in a deep pot with (ham hocks, or ox tails, or smoked turkey) that has already been cooked. then add the cooked collard greens with some seasonings to taste, no salt the meat has enough you can add later, black pepper, some garlic powder to taste ( i use garlic powder), cayenne pepper if you like them spicy, and bring to boil, cover and simmer until tender. You may want to add a teaspoon of white vinegar and a large onion diced in large pieces. they are very good and very healthy. Good luck

Well in my family, we cook our green until they are really- like spinach. But you cut up an onion and garlic, put a big ol pot of water on to boil. Put in the pot some salt and about a half teaspoon of red pepper flakes. Put a couple of smoked turkey parts in the water. Put the fire on high til the water boils. When it boils, turn the water down till about half of the water boils out. Then drop i your onions and garlic, and your chopped and cleadned greens. Put a top on and let it cook til you ready to take it out. If you want some cruch, it will be quick. If you dont, then it will be long. When its finished toss a splash of hot sauce and a splash of vinegar on it. well if you like that. And thats it.

Southern Greens:
Extra Virgin Olive Oil and butter
smoked turkey, thick slices chopped
1 onion, chopped
1 bag greens, chopped large
sprinkle of sugar
splash of apple cider vinegar
1/2 bottle dark beer
Heat Olive Oil and butter and add turkey to pan and brown well. Add greens. Turn down heat a touch. Add sprinkle of sugar, vinegar and beer. Simmer gently couple minutes.

INGREDIENTS:
1 tablespoon olive oil
3 slices bacon
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon pepper
3 cups chicken broth
1 pinch red pepper flakes
1 pound fresh collard greens, cut into 2-inch pieces

DIRECTIONS:
Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan. Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt.
Pour in chicken broth, and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.

you can mash up a 1/2 head of garlic and throw it in the pot. a sliced up onion is good too. i put in a bottle or 2 of malta -- its a cuban soft drink -- you can use pepsi too -- it gives it a little sweet extra it needs cause its kind of bitter without it. a lot of people use beer. a lot of people use vinegar and sugar. a lot of people use hamhocks. try going to foodnetwork.com and put in collards and look til you find something you are happy with.
