I had some Chicken Satay (just the chicken) at a festival recently, it's my new favorite thing, and I'd like to make it at home. I found a mix to make the sauce, but I'm not sure what to serve it with. Noodles? Rice? Veges? Etc.?

rice goes well as do veggies - anything with an asian twist. Pineapple would also go well.

I tried eating it in Singapore with rice, but the rcie they used were packed so tightly and were cut in squares that they look like pudding or bread pieces. It was actually fun to eat since you just have to stick the rice squares on the same stick where the satay are.

Chicken Satays over Thai Salad 1.5 lbs boneless chicken cut into cubes 4 stalks lemongrass, bottom third only, peeled and minced 2 cloves garlic, minced 2 tbsp cooking oil 2 1/2 tbsp lemon juice 2 3/4 tsp sugar 1/2 tsp salt 1/4 tsp fresh-ground black pepper 2 tbsp Asian fish sauce 1 tbsp water 3/4 tsp rice-wine vinegar pinch dried red-pepper flakes 1 small head romaine lettuce, cut crosswise into 1/2-inch strips (about 1 quart) 2 carrots, peeled into strips 1 cucumber, peeled, halved, seeded, and diced 1/2 cup lightly packed cilantro leaves 1/4 cup chopped fresh mint In a medium glass bowl, combine thechciken, lemongrass, half the garlic, the oil,1 1/2 tablespoons of the lemon juice, 3/4 teaspoon of the sugar, the salt, and black pepper. Set aside. In a small glass bowl, combine the fish sauce, the remaining 1 tablespoon lemon juice, garlic, and 2 teaspoons sugar, the water, vinegar, and red-pepper flakes. In a large bowl, combine the romaine, carrots, cucumber, cilantro, and mint. Light the grill over high heat. Thread the chicken onto eight skewers. Grill the meat, turning, until done. Toss the dressing with the salad and serve topped with the satays.

rice wil rock with chicken u shuld also focus on some accomapniments with rice n chicken as such white wine wil enhance d taste n cheese which also enhance taste n be sure that if u serve chicken wid rice it must have sauce in large quanity. in the end BON APPETITE

Try it as an appetizer with a seaweed salad!

INGREDIENTS:
1 cucumber
1/4 lb. wakame seaweed
4 tbsp rice wine vinegar
1 tbsp sugar
3 tbsp soy sauce
1/2 tsp salt

PREPARATION:
Soak wakame seaweed in water until soften. Cut cucumber into thin rounds. Put salt over cucumber slices and set aside for 30 min. Squeeze cucumber slices to remove the liquid. Mix vinegar, sugar, and soy sauce in a cup.
Cut wakame seaweed into bite-sized pieces. Put wakame seaweed and cucumber in a bowl and pour the dressing over and mix well.

Try it as an entree with a basic Curried Rice:

Ingredients:
3 cups cooked rice
1 egg yolk
1 teaspoon curry powder
1 green bell pepper
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons unsalted butter
1/4 teaspoon cayenne
1 onion
1/2 teaspoon turmeric


Directions:
Saute onion and green pepper in butter until onion is tender. Stir in curry powder, turmeric, slightly beaten egg, salt, pepper and cayenne. Mix into hot rice.

Steamed veggies with a touch of unsweetened coconut milk. Or, just quickly stir fry the veggies with some noodles in a little hot sesame oil. (onions, peppers, cashews, etc.)

Also, throw a few fresh basil leaves in if you do the stir-fry thing. You'll love it.

I have always enjoyed my chicken sate with lo mein noodles or stir fried vegetables.

it is usually served with a side of cucumber slices and shallots in a sugar and vinegar reduction. that's how it comes at my cousin's Thai restaurant.
