Hot 'n Cheesy Spinach & Artichoke Dip

(Don't let the long ingredient list scare you- it all just gets stirred together in a bowl! This recipe is super-easy but your friends will never know it!)

Ingredients:

1 - 8 oz. package cream cheese
1/4 c. mayonnaise
1/4 c. grated Parmesan cheese
1/4 c. grated Romano cheese (shortcut! Parmesan and Romano can be purchased combined- just use 1/2 cup!)
1 clove garlic, minced (shortcut!! Buy garlic in paste form or pre-minced in a jar!)
1/2 tsp dried basil
1/4 tsp garlic salt
salt and pepper to taste
1 - 14 oz. can artichoke hearts
1/2 cup frozen chopped spinach, defrosted
shredded mozzarella cheese for topping

Preparation (5 minutes):

1. Preheat oven to 350 degrees.
2. Grease baking dish or spray with nonstick spray.
3. Take cream cheese out to soften.
4. Squeeze as much water as possible out of the spinach. Lint-free cotton discloths work great for this- just wrap the spinach in one and wring!
5. Drain the liquid from the artichoke hearts and chop them up. The size is up to you, depending on how chunky you'd like the dip to be. If you want a very smooth dip you could even give it a whirl in the food processor.

Cook! (5-10 minutes)

1. Mix together in a large bowl all the ingredients except the spinach, artichoke hearts, and mozzarella cheese.
2. Add the spinach and artichoke with the other ingredients and stir gently to combine.
3. Transfer the mixture to the baking dish. Top with mozzerella cheese and bake for 20 minutes or until browned and bubbly!

*Another Idea*

Serve it in a bread bowl! Bake without adding the mozzerella cheese, allow to cool slightly and scoop into bread bowl. Top with mozzerella cheese and broil till the mozzerella melts and starts to brown. It should drip down the bread bowl's sides a bit and look very appetizing!!!!

My frozen bannana pops. just cut bannas in slices, coat in in melted chocolate, add a tooth pick and then put in freezer for 2 hours.
