I am making chicken parmesan but instead I am not making the chicken breaded. I am just frying the chicken and then melting the cheese over it. Does anyone know if this is a good idea and if it will taste good?

Be careful not to scorch the cheese. Parmesan burns easily, and clings to the pan.
Roll your fried chicken pieces in the parmesan off the heat, in a plate.
The residual heat will suffice to make the cheese stick to the chicken, and not to the pan.

Yes it is good. Fry a thin cutlet in olive oil. Don't over cook. Only five minutes on each side in med heat. Use mozzarella cheese or for a real treat use Asiago. Put Chicken in roasting pan and under the broiler to melt cheese. Warm tomato sauce in sauce pan and put it over chicken after cheese is melted. Sprinkle with grated cheese. It will taste must lighter without the bread crumbs

You need to grill (or pan fry) the chicken first. Then put it in a baking dish. On each piece of chicken, put the tomatoe or sauce and then a piece of mozzarella cheese. Bake at 350 for about 20 minutes.

I do it this way all the time to save on calories and fat.

It'll be fine - if anything a little healthier for you! The sauce & cheese might slide around a little instead of sticking right onto the bread crumbes, but who cares!

Sounds like chicken chest with cheese to me. I would feel like I was missing out on the bread crumbs if I had to eat it that way.

Yeah it will taste good but better with chicken although it taste good without also

I'm sure it will taste pretty much the same, the chicken just wouln't be a crispy

it will just be more fancy breaded.
