It means to look at all the things you have to be grateful for. For example: If you have a roof over your head, clothes on your back, your health, and food - you have an aweful lot to be thankful and grateful for. Some people don't have that. Usually "Count your blessings" is a phrase people use when they're trying to get you to see the positive side of your life as in, "Yeah, maybe Jim doesn't like you, you're failing your classes, and you broke your leg, but count your blessings." There's almost always someone else out there worse off than you.

It is about learning gratitude for the good things in your life rather than living a life constantly geared toward problems.
We should be problem-solvers, but constant attention to problems can lead to exasperation. We need to stop for a time (perhaps each day) and praise God for the grace He gives to sustain us, whether it is material things, family, friends, health, love, intellect, or whatever. The greatest blessing, of course, is His Son, Jesus Christ, Who died that we might live eternally.

Being grateful for what God has blessed you with. Blessing can include: you woke up this morning, you have two eyes instead of one, you can hear.... etc. etc.
