Firstly, I note that you say peel, not chop.

The eye irritation comes from the release as an "aerosol" spray of the acidic contents of the onion's cells, which are inevitably broken when cutting it.

The trick is to do the evil deed as quickly as possible and with releasing as little of the acidic spray as possible.

Use a large, sharp cooks knife. Leave on the outer skin. Cut off the top and tail of the onion. Then make a cut down one side and through one "layer" and peel off this and the outer layer. Doing it this way breaks as few cells as possible.

To avoid tearing, caused by sulfur compounds in onions, try holding onions under water to peel, then freeze them for 20 minutes before chopping. An inexpensive pair of plastic goggles from the hardware store is the best way to prevent tears.

Keep onion in the fridge. I always keep a couple of onions in the fridge for use when I need one. I found out completely by accident that if you keep it in the fridge for some reason it doesn't make you cry when you come to peel/chop it. Works for me every time. Hope that helps.

When the sulphur in the onion comes in contact with the moisture of your eyes, it creates sulphuric acid. Ouch!
So, you have to somehow physically block the sulphur fumes from getting to your eyes.

Some things I've tried:
1. Wear swim goggles
2. Peeling onions under running tap water
3. Stick out your tongue so the sulphur fumes attach to the moisture of your tongue instead of travelling further up to your eyes.
4. Buy sweet onions instead of the high-sulphur cooking onions
5. Use a food chopper or food processor
6. Get someone else to do it for you.
7. Buy dried, chopped onions.

Peeling the onion under running cold water helps. Sometimes it helps just to rinse the onion and the knife under cold water. My sister on the other hand uses swimming goggles and assures me that they work perfectly!

I keep my onions in the fridge. No problems!

Although, if you need a cover for a good cry, blame the onion.

i hope that peeling onions doesn't make you depressed- if it does maybe you should just leave them out!! anyway, try wearing goggles and breathe from your mouth instead of nose!! good luck and cheer up x
