I know it's too much to hope for to dream of it being as soft as it is in the store, but a bit softer would be an improvement.

Try brushing it with a little butter after you bake it. It is so hard to get a crust that isn't well... 'crusty'.

Do you have no teeth? Crusty bread is the food of the gods and you didn't even realise it?
Why try to copy that soggy pap they sell you, the stuff that goes mouldy but not dry, the stuff that's only good for sticking your false teeth in with :-))
No the only thing I could recommend is milk bread for those mornings after the night before when the jaw is slack and the concentration somewhat wanting....

Try making muffins or rolls that do not have to be baked as long as a loaf. That will yield a thinner and softer crust.
