I've used oily fish for kedgeree for a long time and it's GREAT!
Personally, I think it tastes much better than haddock and plaice. It's incredibly tasty and absolutely gorgeous!
If I had to name a favourite, it would be mackerel.
I'm gonna have to make some for tea tomorrow now - you've really got my taste buds going!

Yes, go ahead and enjoy the results! I make a great kedgeree with salmon and it is enhanced by the addition of pieces of sun dried tomato. Another ingredient which I love to pop in is cardomon seeds. Be innovative! That's how kedgeree started, wasn't it?

oily fish is healthier, ie salmon, mackerel, herrings, sardines, trout and tuna

Of course you can, you can make anything with anything, as long as you like it.
Try Arbroath Smokies - if you can get them, more fresh on them than kippers or mackerel.
If you want to be really health use brown rice.
