It's a LOT of work. Plaster is heavy so it's hard to remove & dusty, and disposal is expensive... you can't just put it in your kitchen trash can and expect the trashmen to remove it. Under the plaster is lots of rows of wood strips called lath. All of that has to come off before you can put any drywall up.
Also be aware if you have a condensation problem, it'll cause mold and other problems with the dryway..
Instead of tearing out the ceiling, I'd add a better vent fan for the room. Then just sand and repain the ceiling.

Another option would be to use a sheet of 5/8" greenboard and laminate it to the existing ceiling. Just use a 2" screws to make sure you hit the joists above the plaster lath or else you will be putting more weight on the plaster system causing it to fail and fall. You will want to put the screws in about every 12" to get the most gripping capacity possible.
It's cheaper and less messy this way and you don't have to worry about the walls crumbling when you tear down the plaster near the edges.
Also add an exhaust vent if you don't already have one.

It is a big messy job, but tear off the old plaster and get down to the studs and put on drywall. Buy a bunch of masks to breath through.

Instead of going to the hassle of removing all the old plaster and lath, first buy yourself a stud finder, mark on your existing ceiling where the studs are located, then taking 1" by 2" spruce strips attach these to your ceiling and then attach 3/8" green-board to those.

you have to tear everything off, the plaster & the wood slats that are called the lath, after you have stripped it down the the rafters check the wood out & replace anything in bad shape patch or scab rafters back together with new 2 X 4 lumber and install new wallboard to the thickness required by the code in your area, you can do what you want with your new cieling as far as spraying a textured surface or just painting, there are many options but first you have to tear that old stuff out down to the ceiling lumber. it's a messy job.
