Chewy Caramel
"Rich, chewy caramel to individually wrap or use in candy making."
Original recipe yield: 1 pound.
Prep Time:10 MinutesCook Time:30 MinutesReady In:40 MinutesServings:32 (change)

--------------------------------------------------------------------------------

INGREDIENTS:
1 cup butter or margarine
1 pound light brown sugar
1 (14 ounce) can sweetened condensed milk
1 cup light corn syrup
1 pinch salt
1 1/2 teaspoons vanilla extract

--------------------------------------------------------------------------------

DIRECTIONS:
In a heavy bottomed saucepan over medium heat, combine the butter, brown sugar, sweetened condensed milk, corn syrup and salt. Bring to a boil, stirring constantly. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Cook for 2 minutes at that temperature.
Meanwhile, butter a 9x13 inch baking pan. When the caramel is ready, pour into the buttered pan. Allow to cool completely at room temperature. Remove from the pan and cut into squares using scissors. Wrap individual pieces in waxed paper or cellophane.

Ooh, I know what you mean, hang on, I'll check.

Title: Caramel Sweetened Condensed Milk
Categories: Toppings
Yield: 6 Servings

1 can Sweetened condensed milk (not evaporated)

Remove label from can. Place UNOPENED can in the bottom of a VERY DEEP pot, such as a deep dutch oven. Cover with water so that the water is 3 to 4-inches above the can. Bring the water to a boil and boil steadily for four (4) hours.

YOU MUST MAKE SURE THAT THE CAN IS ALWAYS TOTALLY COVERED WITH WATER. NEVER LET THE WATER LEVEL GET DOWN TO THE TOP OF THE CAN, BECAUSE THIS COULD CAUSE THE CAN TO EXPLODE.

Don't worry, I've been doing this for years and years. At Easter time I boil 2 to 3 cans at once. After the four (4) hours is up, remove the can with tongs and place on a wire rack to cool. Be assured, the can will not explode. Refrigerate. When can is cold, open and you will have soft caramel; even the color is caramel. The only bad thing about boiling this one can is that you will be sorry you didn't boil two or three.

Did you know you can make caramel from sugar and water? But, if you're wanting to make it with sweetened condensed milk, try this:

Ingredients:
1 (14 ounce) can sweetened condensed milk

Directions:
Fill a large saucepan with water and bring to a boil over medium heat. Place the can of milk, unopened, in the boiling water. Cover and let simmer 3 hours, topping off water as needed and turning the can every half hour to prevent scorching. Carefully open can and serve.

I'm pretty sure they sell caramels in England. But you can make a caramel flavored frosting with brown sugar and condensed milk.

caramel is just sugar. you heat it in a pan on low for about 15 minutes, and it melts into caramel. If you want "creamy caramel" you could add some milk after the sugar caramelizes. It depends on what you are adding the caramel to. creamy caramel might be better as an icecream or cupcake topping than regular caramel.

Just boil the can where the condensed milk is in. Once you've biled for 20 mins., you could out it in the fridge so it get cold, and then just open the can, and you'll have caramel

Peel off the label, and drop the unopened can in simmering water for 4 hours. You will need to add water every 30 minutes so it doens't evaporate out during that time. Keep a kettle close by, ready to add to the saucepan. Let can cool completely before opening.
