Hello, I go to a pig roast every year at a friend of ours. He stuffs the pig with tons of highly seasoned chicken parts. I have never ever had such great chicken and pork all at once. You can do a southwest flavor on the chicken using hot pepper, cilantro, chili powder, cumin, whatever southwest flavor suits you and your guests. A really good one is using a home made mixture of all types of seasonings and salts. Kind of like a Lawry's, but home made. You avoid all of the preservatives and you can taylor make the salt/rub/seasoning. Whatever flavor you choose, rub the living daylights out of the chicken parts with it and let it marinate with the seasoning on it for a good 4 to 6 hours. then fill up the cavity of the pig with it and put it on the kettle grill (he uses a converted oil crum that was sand blasted) or dig a pit. Another great thing to do for a pig roast is tons of corn on the cob, cooked in great big kettles and I always make a big batch of Calico Beans. Good eating and unpretentious. Not exactly a sit down meal for not exactly sit down guests!

Baked beans? Potato salad? Dessert of some kind? Chips and a variety of dips? BBQ pork sandwiches? Cheese? Remember the KISS rule. Lots of chilled beer in washtubs. And don't underestimate bikers, they can like nicer things for food and beer. :)

I have a great appetizer. It makes alotbut, really cheap! Here is one recipe double it triple how ever you need. 1 pkg. burritto tortilla wraps 2 pkg. cream cheese(softened) 1 jar jalapenos (I only use about half of the jar depending on how hot you would like them to be) remove the seeds !!!! blend thte jalapenos in a chopper then blend with a mixer into the cream cheese spread over the wraps rolls tightly cut into rolls refigerate ENJOY

This is a good one...I scaled it for 150 people....its quick and easy to make..You could use bacon bits in place of the bacon slices....

Easy Seven Layer Vegetable Salad
"This cold veggie salad is terrific for holiday dinners or family gatherings! It has been in my family for several years now and is always requested at family reunions and barbeques."
Servings:Scaled to 150
Original recipe makes 15 (change)

INGREDIENTS:
10 heads lettuce, torn into small pieces
10 (10 ounce) packages frozen green peas, thawed
5 cups chopped green bell pepper
120 slices bacon
15 cups small cauliflower florets
5 cups chopped celery
20 cups mayonnaise
1-3/4 cups and 2 tablespoons white sugar
2-1/2 pounds shredded Cheddar cheese

DIRECTIONS:
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside. In a 9x13 inch pan layer the lettuce followed by the peas, green pepper, bacon, cauliflower and celery.
In a small bowl combine the mayonnaise and the sugar. Spread mixture over salad. Sprinkle cheese over top. Cover and chill for at least 8 to 12 hours before serving.

can't go wrong with a good 7 layer taco dip - in a large flat platter, put in layers, schredded lettuce, then diced onion, tomatoes, then refried beans, then guac (if you don't want that you don't have to), then shredder monterey Jack, then sour cream then top with jalopeno peppers if you want some kick! - oh serve with tortilla chips
