Gravy. That's the difference.
And people will put just about anything in a meatloaf whereas Salisbury steak is pretty much meat and gravy.

H. Salisbury (1823-1905) and named for him. As a Salisbury steak is a fancy hamburger. Does not have the egg, oatmeal, and other ingredients that are mixed into a meatloaf.

As far as I know. Salsbury steak is cubed steak cooked in a gravy sauce. I make it all the time and the longer it cooks the better, and it is SOOOO much better that meatloaf which is just made with hamburger.
