why is it esstiental to have this ingrediant same with adding salt and sugar.

All they can do is educate the public about what this ingredient can do to you. You can chose to eat it or not. There is Olestra, but a lot of people cannot eat it because it can cause terrible, explosive diarrhea (no joke--it says so on the label.)
