Smoked haddock omelette

Ingredients
300ml/10floz milk
300ml/10fl oz water
3 bay leaves
2 slices onion
6 black peppercorns
275g/10oz undyed smoked haddock fillet
6 free range eggs
20g/3/4oz unsalted butter
50ml/1¼fl oz double cream
2 tbsp freshly grated parmesan cheese
salt and freshly ground black pepper
Method
1. Mix the milk with 300ml/10fl oz of water toghether, pour it into a large shallow pan and bring to the boil.
2. Add the bay leaves, onion slices and peppercorns and bring back to the boil.
3. Add the smoked haddock and simmer gently and poach for about 3-4 minutes, until the fish is cooked. Lift the fish out on to a plate and leave until cool, then break into flakes, discarding any skin and bones.
4. Pre-heat the grill to high.
5. Whisk the eggs together with some seasoning.
6. Heat a 23-25cm/9-10 inch non-stick frying pan over a medium heat, then add the butter and swirl it around to coat the base and sides of the pan.
7. Pour in the eggs and, as they start to set, drag the back of a fork over the base of the pan, lifting up little folds of egg to allow the uncooked egg to run underneath.
8. When the omelette is set underneath but still very moist on top, sprinkle over the flaked smoked haddock.
9. Pour the cream on top, sprinkle with parmesan cheese and put the omelette under the hot grill until lightly golden brown.
10. Slide it on to a warmed plate and serve with a crisp green salad.

Easiest way to cook your smoked haddock, is to pour some fresh milk into a pan, add a knob of butter, add the smoked haddock and slow cook for about 12 to 14 minutes. You should then thicken the sauce, by adding some cornflour/cornstarch and when the sauce has thickened, it can be poured over the perfectly cooked smoked haddock. This is the way we do it in SCOTLAND and it makes a most delicious meal. If you try it, do come back and tell me if you enjoyed my recipe.

Smoked Haddock Soup
INGREDIENTS:
500g/1 lb smoked haddocks or "finnies" 1 onion 2 cloves garlic
3/4 litre/1-1/2 pints cold water 1/4 litre/1/2 pint single cream 100g/3 oz butter
50g/1-1/2 oz flour a screw of black pepper chopped chives, parsley or basil to garnish
1 Slice the onion and crush the garlic. Melt one-third of the butter in a heavy-bottomed pan. Add the sliced onion and soften it without colouring.
2 Cut the haddock into pieces and add to the pan. Cover with the water. Simmer for half an hour.
3 Melt the remaining butter and mix with the flour. Strain the stock into this second pan. Bring the soup to the boil and check the seasoning: it will probably be salty enough.
4 Remove the fish from the bones and put on one side for fish cakes another day.
5 Add the cream, re-heat and serve with plenty of freshly chopped chives, parsley or basil, or all three.

I'd do risotto, brown an onion and a red pepper, add the risotto rice and brown slightly, add the correct amount of water. leave to simmer until rice is cooked, 5 mins before end of cooking add the haddock cut up into small pieces and if you have any herbs (not sure which as i have a tin from tesco that has a delicious mis of herbs in it) and serve. oh also add some peas with the fish too. yummy!

Can be as complicated as you like but keeping it simple. Boil some rice (brown or white), meanwhile simply poach the fish in some milk, drain and flake, mix through the rice with the following .
Sweat off a small chopped onion and a clove of garlic in a little butter or olive oil (butter is richer), with a good spoonful of curry powder.
Stir the lot together (with a couple of chopped boiled eggs if you like them). You can add cream or yogurt to make it creamy, or a little of the milk from the fish. Season with salt and plenty of black pepper.
Sprinkle with coriander if you have it.
Nice supper dish.

If they are properly smoked they are ready to eat and do not require any more cooking. Cook up some potatoes, carrots and peas to go with the Haddock and enjoy the meal.

PUT SOME PARMA HAM ON SOME GREASEPROOF PAPER PUT A BIT OF HADDOCK ON THE HAM THEN SOME COOKED MUSHROOM ON THE HADDOCK THEN ANOTHER BIT OF HADDOCK ON THE MUSHROOMS THEN WRAP THE HAM ROUND TO MAKE A PARCEL BAKE IN HOT OVEN FOR ABOUT 10 MIN'S OR UNTIL COOKED........ IT IS SUPER I WONT EAT SMOKED HADDOCK ANT OTHER WAY NOW.........

put half milk with half water add nob of butter place smoked haddock in with touch of pepper bring to boil then turn it off and leave it in pot for 5 minutes then serve
