I probably used 5 pounds whipped butter (for baked potato sides) a week, and 3-4 pounds margarine for grilling a week. I was always buying cases of both every week.

I had a seating capacity of anywhere between 50-80, more if the party room was booked, and that could be an additional 90. So I don't know if that counts as medium.

My friends own a restaurant and I think that depends on what type of food you sre serving,and haow much butter is called for in your recipes

I think most resturants use margarine because it less expensive.
