If you're using Yahoo, go to Mail Options/Preferances and there under Compose, you'll see Use graphics or something and the other button says Text.

well in word go to view- toolbars- formatting

i dont kno how to do it on email though
but there are shortcut buttons to do that
Ctrl+I = italics
Ctrl+U = underline
Ctrl+B = Bold
there a whole lot more and i think you could probably find them on the internet some where but i dont know where

go to "view" - toolbar -formatting;you should now be seeing all the missing ones.This applies to general composers.
If you are referring to some webmails,you should be using html version and not just the text version
