This is one of my favorites, I LOVE it.

Silken Lemon Creme Brulee

6 servings
time to make 20 min 15 min prep

1 (12 ounce) box firm silken tofu
1/2 cup soy cream cheese (or regular cream cheese)
1/3 cup white sugar, plus
1 tablespoon white sugar
1 grated lemon, zest of (2 teaspoons)
1 lemon, juice of (3 tablespoons)
1/2 cup white sugar (for caramel)

1. Combine the tofu, cream cheese, sugar and lemon zest in the bowl of a food processor. Process until creamy and perfectly smooth, then add the lemon juice and pulse to combine, scraping the bowl down several times.
2. Divide the mixture among six wide, shallow heat-proof dishes or bowls. Smooth the tops as flat as possible and chill for at least two hours.
3. To caramelize, use a brulee torch or preheat broiler until blazing hot. Sprinkle a thin layer of sugar evenly over the surface of the custard. Set the dishes on an upside-down baking dish so the surface are no more than one inch away from the heat. Watch carefully as the sugar melts and then caramelizes; it goes fast once it starts. If you're using a torch, move the torch back and forth until the sugar melts and browns. Let stand a moment, then serve.

I'm not the biggest tofu fan but I know it's healthy so I usually have it one of four ways:

1. cut into bite size cubes and put it on top of a salad. I use miso dressing (which you can get at Trader Joe's) so it has an Asian flair.

2. add it to my miso soup. I'm too lazy to make it from scratch so I just buy the instant mixes from Ralphs or a Japanese grocery store.

3. Make Mabo Tofu. This is a spicy Chinese pork/tofu dish. Japanese stores (and maybe select American ones) carry the sauce which you saute the tofu and pork in. Just sprinkle some green onions over it after it's done cooking and pour over rice.

4. Sometimes I just take the tofu and eat it cold with some bonito fish flakes, green onions, and shaved ginger on top. I'll also pour some soy sauce over it. Lots of Japanese people eat it like this.

hard tofu is easier to good with, I saute mine in one tsp olive oil, half tsp siracha sauce and two tsp of ketchup. then add it to grilled veggies. I also add half tsp of peanut butter for added protein to the pan in the very end. I want some now...

Hot and sour soup! I love it! The recipe's on epicurious.com, I just leave out the mushrooms.

(My husband won't eat tofu, so it's a treat when I make it.) :)
