I love to use edible flowers in presentation. Nasturtiums, Violets, Kudzu flowers, Clover (purple & White) are all edible, and add color & flavor to a dish.

One of my favorite tricks is to put leaf lettuce (NOT iceberg) around the platter before plating it. Berries are always a nice garnish. You can get a margarita or martini glass and hang grapes over the edge and put split strawberries on the sides of the glass. Flowered tomatoes? Carrot ribbons? Split green onions in cold water to make them flowery? Radish florets, same thing, in cold water? Orange or lemon peel twists? A big platter or cake pedestal of fresh fruit?

Garnishes: Chopped parsley sprinkles over the plate, desserts drizzled with chocolate or caramel sauces, mint or basil leaves, strawberries, lemon wedges.

Color: Be sure to have a variety of colors on the plate: Greens, Yellows, Reds, Oranges

Also pay attention to the table setting and dishes
