a dream is something you can't really control, it's what you want deep down inside you. a fantasy is something you can control, for example, 5 min. before summer break begins you are thinking about everything you want to do over the summer.
to understand dreams you have to read into them but for more information try www.dreamdoctor.com

While all the answers here are certainly very sound ones, I personally look upon the differences between a dream and a fantasy as thus:
A dream is a desire that can be achieved
A fantasy is a dream that can never be realized because it can not be achieved.
By setting achievable goals a dream (ex. dream house, dream job, etc.) is do-able.
A fantasy is an idea that a person has no intention of setting achievable goals to make it happen due to the constraints of reality.
Ex. living in a ginger bread house with lemonade skies.
