Wide angle is best I am told, but several to choose from (12mm, 17-55mm, 20mm, 24mm, 28mm) and what does the f stop mean? Is it best to get an adjustable like f/3.5-5.6 or a lower number for interiors in case lighting is not so good? I want to be able to stand in the doorway of a small bathroom and take a picture of the entire room, as well as entire kitchens, dining rooms, etc. Any suggestions on lighting/flash to use would be helpful as well as the lenses.

I would say in this case you want to get to a shop where you can try out the different lenses. The wider you go (smaller mm number) the more distortion you get at the ends of the frame. Some lenses handle this better than others and they are usually more expensive as stated above. By distortion I mean the sides of the picture will look like they are leaning in towards the center.

You want the Canon 10-22mm. $700.
Or for around $500, you could pick up a third party 12-24ish lens.
Never mind the f-stop. You don't have much choice.
