Don't know that it was, except that if Jesus said to do it, it's best to do what He says. There might have been some reason, but Jesus could have turned the air into jars of wine if He wanted. For that matter, He could have just spoken them into existence like He did at the creation (Genesis 1). But, He didn't do it that way. Why? Who knows. He's God, He can do it whatever way He wants. And I'm sure if He were to sit down and explain it all to me, why He does every little thing He does, my head would be spinning by the time He was finished. God is awesome! Who can search His mind and heart?

Weddings in those days were long, week-long affairs. When Jesus went to turn the water into wine, it wouldn't do to only make a half jar of wine to quentch the thirst of the many guests. Instead, he had them fill them to the brim to not only serve the guests, but to make sure the hosts didn't look cheap.

When Jesus was going to do a miracle, He always required the person to do something, as a sign of faith. Examples are, did seven times, take up your bed and walk, make a meal for the prophet with your last supplies etc.
