This is what I always use. Enjoy,

Mashed Potatoes
Potatoes are my all time favourite food. Here are some ways to make mashed potatoes more interesting.

Peel potatoes. Cut all pieces to a uniform size. Put new potatoes into boiling water. Put old potatoes into cold water. Cook just until done -- about 20 to 25 minutes(over cooked potatoes absorb water). Mash. Add enough milk to hold potatoes together -- about 1/4 cup per pound of potatoes. Add 2 tablespoons butter per pound if desired. Mix well. Use hand mixer for creamed potatoes.

Variations
Put one or two toes of garlic in the water when you boil the potatoes. Remove them before mashing.
Put a piece or two of onion into the water. Remove before mashing.
Mash 1/2 to 1 cup cream cheese into the potatoes. Thin with milk to desired consistency.
Stir in 1 tablespoon parsley flakes for colour.

Everyone will give you a different version.

Basic mash is just potato and either milk or butter (sometimes both) to mash it with - I prefer just butter (or even olive oil).

When I make mine I usually use a 1/2 potato 1/2 sweet potato mix, and cook several cloves of garlic with them while they are boiling - unlike earlier suggestions I mash them in to the potato.

If roasting vegetables with the rest of the meal the garlic can be roasted then squeezed into the potato at the mashing stage.

When mashing I usually add either spring onion (scallion) or chives for a bit of colour.

Sometimes I also add grated cheese when mashing for a richer flavour, this can also be put under a grill for a while after mashing, with a bit more cheese on top, to give a crispy top.

Hi, all you need for mashed potatoes is boiled potatoes, butter, milk, and salt and pepper, and a potato masher. Mash the potatoes, add about 2 tsp. butter, salt and pepper to taste, and enough milk to make them be creamy. Some people whip the potatoes with a mixer and you can also add some parsley to add color.

Peel and boil potatoes until soft.(Test with a knife). Then drain.
Add a good nob of butter, a dash of milk and a sprinkle of ground white pepper. Mash with a Masher until all the lumps are gone. Delicious, I might go and make some myself.

MASHED POTATOES

Mashed potatoes are always a crowd-pleaser at holiday meals. But if you want to mix things up a bit this year, try one of our delicious variations, below.
Active time: 30 min Start to finish: 40 min

4 lb large boiling potatoes such as Yukon Gold or russet (baking) potatoes
1 1/2 cups whole milk
1 stick (1/2 cup) unsalted butter, cut into tablespoon pieces and softened
1 teaspoon salt, or to taste
1/2 teaspoon black pepper

Peel potatoes and cut into 2-inch pieces. Cover potatoes with salted cold water by 1 inch in a 5-quart pot, then simmer, uncovered, until tender, about 18 minutes.

Shortly before potatoes are done, bring milk just to a simmer in a small saucepan over moderate heat, then remove from heat.

Drain potatoes well in a colander, then return to pot along with hot milk, butter, salt, and pepper and mash with a potato masher until combined well.

Variations:
• Add 2 cups crumbled goat cheese (8 oz) to potatoes along with butter and milk, and reduce salt to 3/4 teaspoon.
• In place of butter, use 1/2 cup extra-virgin olive oil.
• In place of milk, use 1 1/2 cups heavy cream and 1/2 cup drained bottled horseradish.
• In place of 1 cup of milk, use 1 cup sour cream at room temperature.
• Add roasted garlic: Roast 2 heads of garlic, wrapped in foil, in a preheated 400°F oven 50 minutes. Squeeze roasted garlic from skins into potatoes along with butter and milk.

Makes 8 to 10 servings.

homemade - peel potatoes and then cut into chunks or pieces so they can get softer quicker when boiling them. once soft, mash them and add lots of butter, some milk, and spices such as pepper and garlic. some people add chicken stock to their potatoes, that is good also.
