If you want to roast it for a long time go with a low oven temperature. You coul roast your roast for uo to four hours at 325 degrees keeping a little liquid in the pan, this coud be water, broth or canned tomatoes with the juice. Cooking it this way should make your roast nice and tender. Throw in a quartered onion, some carrots and potatoes for the last foety five minutes and you have your meal. You can also do this in a crock pot.

About 1 1/2 hours and to 170 degrees
Roasting Pork Shoulder and Beef Chuck
1/4 cup vegetable oil
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 1/4 pounds boneless pork shoulder roast
2 1/4 pounds boneless beef chuck roast
Preheat oven to 350 degrees. In a small bowl, mix together the oil, salt, and pepper. Rub the oil mixture over the meats. Roast the pork shoulder about 1 hour. Roast the beef chuck about 1 1/2 hours, until a meat thermometer registers 170 degrees for each meat. Remove the meats from the oven and let cool for 20 minutes. Cover and refrigerate up to one day or until ready to use.

An alternative to the crock pot is to lay the roast of a piece of foil, add seasonings, etc. and wrap in foil and bake in a slow oven for several hours. Very juicy and moist.

Don't bake it. Put it in a slow cooker for 4 to 6 hours. Cover it with water and some seasonings.
