Penguin meat is really tough and gamey, much more so than duck. It is almost impossible to tenderize.
So I recommend 45 minutes in pressure cooker with salt and whatever your other favorite seasonings are.
Take out the cooked bird, dice up the meat and put it into a stew.
Like javelina, it just isn't good by itself.

The trick is in the kill. You gotta beat them just behind the neck with a small "seal club". That will keep the blood from rushing to the muscles. Then I prefer them battered and pan fried. Tastes just like chicken.

Slow roasted with a side dish of baby seal add a few herbs and chunk-ed Vegetables for taste.
You can pick up or order the baby seal from a Newfoundland supplier ask for the freshly clubbed it more tender or I mean tenderized.
