Cheese Stuffed Italian Meatloaf

I wanted to make a different sort of meatloaf for dinner last night, and this is what I came up with. This meatloaf is moist and cheesy and oh-so-delicious! Tastes pretty darn good cold, too. :) I often make a double batch and freeze one in a disposable meatloaf pan to give to bachelor friends.

Preheat oven to 350 degrees F.
In a large bowl, stir together the egg, breadcrumbs (I whir herbed dry stuffing mix in my food processor to make these), garlic, and 1/2 cup pasta sauce until well-mixed.
Add remaining ingredients (except the garnish), and mix together well (I do the whole thing in my sturdy KitchenAid mixer, which works quite well).
Put into a large loaf pan, top/garnish with additional pasta sauce (I like a*lot* of sauce and so use about a half-cup, but three or four tablespoons would do, too), and bake at 350 degrees F for 1 hour.
Serve with rice, spaghetti, or scalloped potatoes.

I've tried many different kinds and I always come back to the basics...this is the best!!
1 lb of 80/20 ground meat (I sometimes use lower fat meat)
1 sleeve of saltine crackers crushed
1 small can of tomato sauce
salt/pepper
1 egg
Preheat oven to 350 deg. and form into a loaf and bake uncovered for 30-45 minutes, I usually cut in the middle and if the juices run clear then it's done, then in the last 5 minutes in the oven I squirt ketchup on top evenly
My whole family loves this recipe.

I found this recipe in a Kraft Food & Family magazine that I received in the mail. I tried it last week and it's a keeper!!

Ultimate Meatloaf
(or, Easy Pleasing Meatloaf)
Prep Time: 10 minutes

2 eggs, beaten
2 lb lean ground beef
1 pkg (6 oz) Stove Top stuffing Mix for Chicken
1 cup water
1/2 cup Kraft Original Barbecue Sauce, divided

Preheat oven to 375 degrees. In a small bowl, beat eggs lightly with a fork. This makes it easy to incorporate them into the meat mixture, so you won't have to overmix.

Place ground beef, stuffing mix, water, beaten eggs and 1/4 cup barbecue sauce in large bowl.

Mix all ingredients with wooden spoon until just blended.

Shape meat mixture into an oval loaf in a 13x9-inch backing dish. Using a large baking dish makes it easier to pour out and discard excess fat.

Top meatloaf with remaining 1/4 cup barbecue sauce.

Bake 1 hour or until cooked through. No need to guess when the meatloaf is done cooking; just use a meat thermometer to check that the center has reached 160 degrees.

(Using stuffing mix is the key to enhancing the flavor and moisture in the meat. It also adds texture, so your loaf keeps its shape!)

You can substitute different brands or flavors of stuffing mix and barbecue sauces for different flavor combinations. I plan on trying different sauces next time I make this...just to see what I can come up with!

Here's a good one from the food network and it's good! Look up food network on the internet, it's called Dad's Meatloaf with Tomato Relish by Tyler Florence. The recipe is too long to write it on here, but you can print it up. Good luck!

Ground beef, ground pork....3-1 ratio, chopped onion, celery, garlic to taste, egg, bread crumbs, one small chopped hot pepper (jalapeno), tomato sauce (or ketsup), oregano...the meat should be moist enough to form a loaf...if too dry add either another egg or more ketsup (catsup)....I don't list quantities as it depends on the amount you want to make....season to your tastes.
