Let's try to cover your confusion. Perhaps you meant for your question to say "Why do beef and veal taste different?" in which case the answer would revolve around same animal (cow) but one is an adult and one is a baby... because veal is from calves (baby cows.) Obviously the meat would be more tender on a baby animal who has not developed the musculature of an adult.

Another question might have been about lamb and mutton. Lamb is from the baby animal... mutton is from the adult sheep.

Because cows and sheep are different animals, I must defer to the remark that apples and carrots taste different... because, well, beef and lamb are like apples and oranges... or... carrots.

Well, the obvious answer would be that they are different animals, and as such would taste different to each other.
I'm not sure what you mean by the question though... maybe you are asking why the two animals, who are both made up of skin, flesh, bones etc, and who have a similar diet and lifestyle(!) taste so different from each other?...

Of course they taste different because lamb is is smaller, eats different things than a cow and is smaller, contains anther kind of fat too

On the program QI, Stephen Fry said that without bacteria chicken would be tasteless. So, I assume that different animals have different bacteria. Why do the various bacteria have a different taste? - haven't a clue.

Hmm, this strikes me as rather like asking why are black and white different colours. Although cows and lambs are both animals, they are DIFFERENT animals and therefore they taste different in the same way apples and oranges are both fruit but ... can you see where this is going yet??? ... they taste different!

Despite coming from the same animal (the pig) lamb is injected with wallpaper paste while beef is marinated in white spirits.
