The rest equalizes the temperature and gives the meat fibers time to reabsorb the internal juices. Without an ample rest, the juices will rush out when you slice, and your meat will be dry.

Don't worry, 15 minutes isn't long enough to make the roast cold. It will still be hot enough to serve, but not too hot to eat.

You let any meat roast rest for a few minutes before carving because (1) You're liable to get burned and (2) The meat will slice more uniformly and nicer after it's cooled.

You should allow any roasts to rest for 15 mins prior to carving and serving. the meat is still cooking and needs that time to come to a rest.

The "Rest" is so all the natural juices are reabsorbed in the the meat. Do it with all baked, grilled, roasted meats & poultry. You'll have a juiceier serving that way.

If you cut any meat before you let it rest a bit after cooking all of the juices will run out of the meat and make it dry.

Do you know that Pork is an unclear meat and the bible speak of not eating unclean meat such as pork. Your body is the temple of God which means if he does not want people to not eat unclean meat such as pork than you should not if you are trying to do God's will.

So it will relax and reabsorbe the juices but do this with all cuts of meat just wrap in foil
