The White Pekin duck is the most popular duck for cooking in America. It's actually of Chinese origin, and is what's used most often in duck dishes served in restaurants, and what's most commonly found in meat departments when purchasing whole duck.

Raising ducks is taking very seriously in China and is considered an art form in some areas. Any kind of duck can be used in preparing Peking Duck, but most likely the White Pekin is used in China, as well.

The White Pekin duck is what you think of when you think of a duck -- beautiful white feathers, with orange beaks and feet. And despite the similarities in name, the name "Peking Duck" was not derived from the name of the duck used, "White Pekin."

It's duck, Peking refers to the way its actually cooked and eaten which comes from Beijing (Peking)
