Frozen Shortcrust Pastry
Chopped Streaky Bacon
1 medium Onion – finely chopped
½ pint Milk
4 large beaten Eggs
Grated strong Cheddar Cheese

1. Roll out pastry and line flan dish. Prick base and chill. Bake blind for 10 minutes, remove greaseproof paper etc., and bake for a further 5 minutes.
2. Fry bacon over gentle heat with onion until onion is soft.
3. Place in bottom of flan case.
4. Add milk to eggs and season, pour into flan case, over bacon and onion mixture.
5. Sprinkle with Cheese and bake in oven at 190c for approximately 30 minutes.

Spinach and Bacon Quiche

6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

Preheat the oven to 375 degrees F.
Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

Quiche Lorrane is a basic quiche and is very creamy with great substance:

2 large eggs
2 large egg yolks
1 1/4 cups half-and-half
1/4 teaspoon salt
1/4 teaspoon pepper
Pinch freshly grated nutmeg
1 cup grated Swiss
(optional, a dash of tobasco or 2 dashed of paprika-give a little heat w/o being spicy)
(optional, add cup of finely chopped smoked ham)

Preheat the oven to 375 degrees F
cook the bacon until crisp and the fat is rendered- you want it crispy

In a large bowl, beat the eggs, yolks and half and half. Add the remaining ingredients and whisk to combine. Pour into the prepared crust and bake until the custard is golden, puffed, and set yet still slightly wiggly in the center, 30 to 35 minutes.

cool for about 15 minutes or it is firm
It will stay wonderful in the fridge for about a week.

Actually I do a Quiche Lorraine, but before it goes in the oven, I sprinkle the top with mixed herbs and half way through cooking, take out of oven and sprinkle with grated Parmesan. Never had any complaints, try it.

this might sound a little mad, but the only quiche ive ever liked is the one from my primary school, over ten tears ago but it has to be with gravy
