I have two fav chicken dishes - rosemary-garlic chicken and crunchy parmesan chicken.
Rosemary-garlic:
3 cups mushed butter (not melted-room temp at the point where the butter can be combined as a "paste")
3tbs fresh rosemary-finely chopped (to taste)
3tbs chopped garlic (to taste)
1 whole chicken
-mix rosemary, garlic & butter in a bowl
-Place whole chicken in a baking dish, breast up
skin stuff the butter mix into the chicken (use your hands to seperate the skin from the meat and "stuff" the mixture in the breast and legs-you can break the seperating tissue)
-rub your hands over the outside of the chicken (to prevent burning) and use toothpicks to close the skin at the opening.
cook the chicken according to weight in the oven at the recommended temp.(typically about 1-1-1/2 hrs)
-remove the foil cover at the halfway cooking time.
-Baste w/juices every 20 mins after 45mins
serve---yummy.
Crunchy parmesan chicken:
use boneless breasts with skin-on
-put a few cups of italian breadcrumbs and shredded parm in a shallow bowl
-coat the breasts in an egg wash (1 whole egg lightly beaten with a little water)
-coat the breasts in the breadcrumb mix completely
-place in backing dish them sprinkle w/parm
-cover w/foil and cook according to weight (typically 350deg at about 30-40mins
-remove foil for the last 15 mins

We call it "Yucky Chicken Alfredo". But the kids actually love it. It only takes about 15 minutes to prepare.
Ingredients
1/2 lb. Chicken breast - cut up into bite sized pieces
1 Tbsp. oil
1/2 lb. Broccoli florettes
1 package frozen Tortellini
1 jar Alfredo sauce
Grated Parmesan (opt)
- Cook the Tortellini according to package direction, but also add the Broccoli to the water. About 8 minutes. Then drain.
- Meanwhile, on Medium High, saute the chicken until throughly cooked in hot oil. Season to taste.
- Lower the temp to Medium and add the Alfredo sauce to the pan and heat completly.
- Pour the chicken and sauce over the Pasta and serve.

Chicken Divan
Take four boneless chicken breasts and sautee them with garlic and herbs in a frying pan with olive oil until cooked through.
In a baking dish, lay a couple of packages of frozen (NOT fresh) broccoli spears on the bottom. Put the chicken breasts over this, cover with an undiluted can of cream of mushroom soup OR cheddar cheese soup. Put in the oven at 350 for about 40 minutes.
Serve with herbed rice and a salad.

My family loves this:
1 box of Shake-N-Bake BBQ glaze
1 teaspoon of oregano
1 cup of mozellrella chesse shredded
1 cut up chicken (8 peices)
pour glaze in bag add oregeno and chicken. Place on baking sheet top with cheese and cooking acorrding to direction on the box of glaze.

I don't how your taste runs but I like it spicy. I go to the Food Network website and type in a request and it's never failed me. If you like salmon let me know. I have a recipe I made recently and it is fantastic.
