First, use a very basic white sauce recipe:
3 tablespoons unsalted butter
2 tablespoons flour
2 1/2 cups milk
salt and white pepper to taste
Melt butter in a saucepan over medium heat. Whisk in flour until smooth. Slowly add the milk whisking continuously until smooth.
Bring to a boil and boil for about 1 minute or until the sauce is as thick as you like. Add the salt and pepper. Stir.
Once you have the basic recipe made, you can add anything you like to make it special -- such as a variety of cheeses (like Parmesan, mozzarella, ricotta), herbs, spices and other seasonings (onion, garlic, oregano, bay leaf), a splash of white cooking wine, mushrooms, olives, capers -- ANYTHING!

Though this recipe uses fettuccine, you can always use spaghetti. If you have never had porcini mushrooms you are REALLY missing out on something. Please give it a try.
Creamy Fettuccine with Porcini Mushrooms
2 ounces dried porcini mushrooms
2 cups hot water
1 pound fettuccine
1 tablespoon butter or margarine
1 medium onion, minced
1/4 teaspoon each salt and pepper
1/4 cup evaporated skim milk
1/2 cup freshly grated Parmesan cheese
Place mushrooms in a small bowl; pour water over to cover and soak 20 minutes. cook pasta according to directions without salt or oil. Remove mushrooms from water. Remove any foreign matter and chop mushrooms. Strain soaking liquid in a colander lined with paper towels and reserve liquid.
Heat a large nonstick skillet over medium heat and melt butter or margarine. Add onion and cook 6-7 minutes or until onions just begin to brown. Add mushrooms, salt and pepper; cook 2 minutes. Reduce heat to low, add mushroom soaking liquid and simmer 10 minutes or until liquid has been reduced by half. (The sauce should be thicker now, but don't overdo it or it will become too dry.) Stir milk into mushroom mixture and simmer 2 minutes or until sauce thickens. Drain pasta and pour into serving bowl; pour sauce over, add Parmesan and toss to combine. Serve immediately.

Depending on how much you want to make, melt about 1 Tbsp butter or margarine. Add 1 cup milk for each 3/4 cup sauce you want. Slowly add flour (by forkful or 1/8 tbsp), stirring constantly. Add salt & pepper to taste.
This is a very basic white sauce & takes almost no time at all.

Salsa Alfredo for pasta:
1 tbsp of butter
1 cup of Milk
1 garlic
Nutmeg
Olive oil
Salt & Pepper
Mix it all and cook it to boiling point. for about 2 minutes. If you desire a more firm consistency, add some flour.

SPAGHETTI WITH WHITE CLAM SAUCE
6 tbsp. olive oil
1 tsp. finely chopped garlic
1 c. clam broth, bottled or from can (use wine to top off)
1/4 c. dry white wine
6 to 8 qts. water
1 tbsp. salt
1 lb. spinach spaghetti (fettucini)
2 tbsp. soft butter
1 can clams, drained but reserve broth
Parsley
Fresh Parmesan cheese
First, cook spaghetti al dente (7 to 12 minutes). Drain well, lifting strands with a fork. Transfer spaghetti to large heated serving bowl and toss it with soft butter. Keep warm.
In a heavy skillet, heat olive oil until light haze forms over it. Stir in garlic and cook over moderate heat 30 seconds, stirring constantly. Pour in clam broth and wine (1 1/4 cups liquid when combined) and boil briskly over high heat, until liquid has reduced to about 3/4 cup.
Add clams and cook 1 to 2 minutes stirring constantly. Pour sauce over cooked spaghetti, sprinkle with fresh parsley and Parmesan cheese and toss until well mixed. Serve at once.

Saute onions, garlic and bacon for a few minutes then add mushrooms. Saute for another 3-5 minutes until mushroom is softened. Add FRESH cream, herbs, salt and cracked pepper to taste and simmer over medium heat for approx 10-15 minutes. Make sure you still it a few times to make sure it doesn't stick. Add finely grated pecorino or parmesan cheese in the last couple of minutes and stir through...Buon appetit

Here's a recipe for the white which tastes simply awesome AND its fast and easy to make.
Mushroom soup!
Just get a can of campbell's mushroom soup, make it, (slightly watery coz it'll thicken later), then pour it over your spaghetti, and walla!

Alfredo or cabanora.
Alfredo - mix 3 tbsp of butter with 2 tabsp of plain flour and add milk or cream to the consistency you like. over the fire. Add salt and pepper to taste
Cabonara - Beat 3 eggs and add to butter and cream over fire. Salt and pepper too.Some cheese if you like the texture and taste.
