They're still there. The Romans were the people of Rome. There's still a Rome in Italy, but now those people are usually called Italians.
As to where the Roman Empire went, it went the way of all empires; collapsed from the difficulty of administering a far-flung empire when the native population is against you. People generally prefer to have their own government, with rulers who speak their language and know their habits. An empire gets broad enough, the administrators either do not know the locals or are hired from the locals, thereby bringing their loyalty into conflict between the locals and the empire.
The other side is the "power corrupts" aspect. The Romans developed so much power they went a bit mad on it. The emperors wanted to be revered as gods, the greed of the emperor and his henchmen made enemies, and the decadence of people with too much time to pursue pleasure and too few responsibilities became legendary.
People who don't have to take responsibility for their own actions invariably end up in the slag heap of history.

I happen to be a Social Studies teacher... The Romans didn't vanish... A germanic king by the name of Odacer took over the city of Rome in 476ad. Historians say that this marks the end of the Roman Empire. However, the eastern 1/2 of the Roman Empire, centered in the city of Constantinople (today's Istanbul in Turkey) remained as the Byzantine Empire until 1453! Rome still stands as a city today, with hundreds of ancient Roman ruins! The Romans are the people that live there, as they have been since Rome began as a city, some 2,500 years ago.

They're still here. The Roman Catholic Church is the last remaining institution of the Roman Empire and it lives on. Until in the 60's or so the mass was given in latin. Most of western civilization is the old Roman Empire.
