Go to expedia.com and you will find the best rates on hotels, but choose a 3 star or above. You can also see pics of the insides of hotels and the rooms which is nice. People will also leave comments about their stay at that particular hotel. Hawaii is awesome!

Someone mentioned the Outrigger Reef...which is a good moderate, one the beach hotel but NOT the best or most romantic. Another person named the Hawaiian Regent which no longer exists - it's now a Marriot or something.
In Waikiki, it would be the Halekulani (5 star, 5 diamond) Hotel. It's gorgeous but the rooms are not "flashy" and it is what I would call "understated elegance". It is the SERVICE that is amazing and that is what you pay for.
The Royal Hawaiian is a classic too but you have to know that you'll be at a PINK hotel in a VERY busy spot. Although the Halekulani is not far away, the Royal Hawaiian is in a much busier spot. It has amazing service as well and it has the feel of "east coast" in the middle of Hawaii.
If you want to stay right in the middle of the bustling Waikiki beach, the Sheraton Moana Surfrider is gorgeous and has a lot of charm. There are two wings to the hotel, the older wing with antique furniture or the newer wing that looks like any other hotel room. I ALWAYS go there for drinks and the atmosphere is so awesome there.
The Kahala Hotel (formerly the Kahala Mandarin Resort) is probably the most romantic. The rooms are gorgeous, beds are amazingly comfortable and they have dolphins and turtles in their lagoons. It is about 25 min drive from Waikiki but it feels like you're away from it all. I've stayed in a 1bd suite for $1500/nt. They have rooms with and w/o balconies (lanais) and you really should get a balcony with an ocean view!
Ihilani is nice but it's a bit artificial. The beach there is man made and it lacks a bit of the Hawaiian charm.

Try the Hilton Hawaiian Village,Halekulani Hotel,Sheraton Moana Surfrider,Royal Hawaiian,Hawaiian Regent,Park Plaza Waikiki and Hawaii Prince. The last 4 are very, very nice. Enjoy your trip! Aloha!

The Royal Hawaiian (www.royal-hawaiian.com) is a classic. It is very expensive, but unless you are traveling around Christmas, or booking a suite you should be able to get a very nice room for under $1000/nt.
Also very good are the Ihilani Resort (www.ihilani.com) and the Kahala Mandarin Oriental (www.kahalamandarin.com),
