Sake which means "alcoholic beverage" in Japanese is referred by the English to a specific alcoholic beverage brewed mainly from rice.

Sake is made from rice, rice koji and water using fermentation and filtration processes. It is made by multiple parallel fermentation of polished rice where a mold/fungus called koji produces the enzymes to act in the process of starch conversion where multiple processes of fermentation occur simultaneously in the same step .After fermentation, the product is heavily clouded with grain solids and is generally filtered.Generally, the product is not aged because consumers prefer the flavor of the fresh product, which degrades quickly in the presence of light, air, and heat.

In Japan, sake may also refer to a distilled beverage made from potato or sugar cane.

An enzyme produced by a naturally occuring fungus called Koji breaks down the starches into fermentable sugars. Yeast then converts the sugars into alcohol. Over time, it becomes sake.

Rice is cooked then fermented. Fermentation takes several days. Sake is served hot.
