Hot dog usually come in a bun. Sausage is by itself.

A hotdog is made of processed meat - turkey, pork, beef and combinations thereof.
A sausage is more of a process. It is made from ground -not processed meat- of any kind and any mix. It also typically contains additional spices and additives such as onion, garlic and such which add to the flavor (breakfast sausages have maple & sweeter stuff, dinner sausages have more"savory" stuff like onion).
Sausages are also piped into a "skin", hotdogs are not, they are pre-formed.
In general, hotdogs are pre-cooked, sauseges are typicially not. Technically, you could eat a hotdog raw, not a sausage.

Sausages were the original hot dog. They are made from ground meat and spices, and packed into pig intestines. Hot dogs are made from much more finely ground meat, and don't have the spices.
Also, sausage is usually made from pork while hot dogs are made from pretty much anything: chicken, turkey, pork or beef.

the way it is processed and the type of flavorings .The type of certain meat parts used to make different meats such as balogna and bacon and so on.The same company can turn around and make potted meat out of these ingrediants also.The difference is what they want to make out of the pile of meat they start with.Its just a option so you can make and serve it the way you wish
